- Brown the ground beef in a skillet over medium-high heat, breaking it up, for about 5 minutes. Add the onion and garlic and cook 2 to 3 minutes until softened.
- Slice the tops off the peppers, remove seeds and membranes, and trim bottoms if needed. Microwave the shells with a little water for 2 to 3 minutes for softer peppers, or skip for a firmer texture.
- Stir the rice, tomato sauce, Italian seasoning, salt, and pepper into the beef mixture. Spoon the filling into each pepper, packing it gently and mounding the top.
- Place the peppers upright in a baking dish, surround them with any extra filling or sauce, cover with foil, and bake at 375°F (190°C) for 25 minutes. Uncover, top with mozzarella, and broil for 2 to 3 minutes until bubbly. Serve hot.
Notes
If you prefer the cheese evenly melted without the broiler, simply bake uncovered for an extra 5 minutes after adding the cheese instead. The peppers will soften further, and the cheese will still melt.
