Stuffed Bell Peppers Recipe

Ingredients
  

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked white rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for serving (optional)

Method
 

  1. Brown the ground beef in a skillet over medium-high heat, breaking it up, for about 5 minutes. Add the onion and garlic and cook 2 to 3 minutes until softened.
  2. Slice the tops off the peppers, remove seeds and membranes, and trim bottoms if needed. Microwave the shells with a little water for 2 to 3 minutes for softer peppers, or skip for a firmer texture.
  3. Stir the rice, tomato sauce, Italian seasoning, salt, and pepper into the beef mixture. Spoon the filling into each pepper, packing it gently and mounding the top.
  4. Place the peppers upright in a baking dish, surround them with any extra filling or sauce, cover with foil, and bake at 375°F (190°C) for 25 minutes. Uncover, top with mozzarella, and broil for 2 to 3 minutes until bubbly. Serve hot.

Notes

If you prefer the cheese evenly melted without the broiler, simply bake uncovered for an extra 5 minutes after adding the cheese instead. The peppers will soften further, and the cheese will still melt.
