Ingredients
  

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup freeze-dried strawberries
  • 1 cup white chocolate chips

Method
 

  1. Preheat oven to 350°F (180°C) and line two baking sheets. Cream butter and sugars until light and fluffy.
  2. Beat in egg and vanilla until smooth.
  3. Crush freeze-dried strawberries into powder, whisk with flour, baking soda, and salt. Stir into wet ingredients until just combined, then fold in white chocolate chips.
  4. Cover and chill dough 30 minutes. Scoop onto sheets, bake 10-12 minutes until edges are golden. Cool on sheet 5 minutes, then transfer to wire rack.

Notes

Chill the dough for at least 30 minutes before baking for the best texture. If you’re in a rush, 15 minutes in the freezer works too, but the cookies may spread a little more.
