Strawberry Stuffed French Toast Recipe

Ingredients
  

  • 4 oz cream cheese, softened
  • 1 tbsp granulated sugar
  • ½ tsp vanilla extract
  • 6 medium strawberries, hulled and sliced ⅛ inch thick
  • 4 thick slices brioche or challah, about 1 inch each
  • 2 large eggs
  • ¼ cup whole milk
  • ¼ tsp ground cinnamon
  • Pinch of kosher salt
  • 2 tbsp unsalted butter, divided
  • Powdered sugar and maple syrup, for serving

Method
 

  1. Stir cream cheese, sugar, and vanilla together in a small bowl until smooth and spreadable, about 1 minute.
  2. Whisk eggs, milk, cinnamon, and salt in a wide, shallow dish until no egg white streaks remain.
  3. Spread a quarter of the cream cheese mixture on one side of two bread slices, staying ½ inch from edges. Top with a single layer of strawberry slices, then cover with remaining bread slices and press gently to seal.
  4. Melt 1 tbsp butter in a large nonstick skillet over medium heat. Dip one sandwich in the egg mixture for 15 seconds per side, let excess drip off, then cook 3 to 4 minutes per side until deep golden. Repeat with remaining butter and second sandwich.
  5. Slice each sandwich diagonally, dust with powdered sugar, and serve immediately with maple syrup.

Notes

If your bread is very fresh, let the slices sit out for 20 minutes to dry out a little, or they will soak up too much egg. Let the cream cheese come to room temperature for the smoothest filling.
