Strawberry Spinach Salad Recipe

Ingredients
  

  • 6 cups baby spinach
  • 2 cups sliced strawberries
  • 1/4 cup thinly sliced red onion
  • 1/3 cup crumbled feta
  • 1/4 cup sliced almonds
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper

Method
 

  1. In a small bowl or jar, whisk the olive oil, balsamic vinegar, honey, Dijon, a pinch of salt, and a few grinds of pepper until the dressing looks smooth and thickened.
  2. Put the spinach in a large bowl. Top with the strawberries, red onion, feta, and almonds.
  3. Drizzle about two-thirds of the dressing over the salad and toss gently until everything is coated. Taste and add more dressing if needed. Serve right away.

Notes

Toast the almonds in a dry skillet over medium heat for 2 to 3 minutes if you want extra crunch. The dressing can be made up to 3 days ahead and kept in the fridge; bring it to room temperature and whisk again before using.
