Ingredients
  

  • 1 cup (125g) whole wheat pastry flour or all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ⅛ teaspoon fine sea salt
  • ½ cup (120g) plain full-fat yogurt
  • ⅓ cup (80ml) avocado oil or melted coconut oil
  • 2 tablespoons maple syrup (optional)
  • 1 large ripe banana
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups (250g) fresh strawberries, hulled and finely diced, divided

Method
 

  1. Whisk the banana smooth in a bowl. Add yogurt, oil, maple syrup, egg, and vanilla, and whisk until combined.
  2. Sprinkle flour, baking powder, baking soda, and salt over the wet mixture and fold just until no dry streaks remain.
  3. Preheat the oven to 350°F (175°C) and grease a 6-inch round cake pan with a parchment liner. Fold 1½ cups of the strawberries into the batter, fill the pan, and scatter the remaining ½ cup on top.
  4. Bake 20 to 25 minutes until a toothpick comes out clean. Cool 10 minutes, turn out onto a plate, and pile extra fresh strawberries on top.

Notes

Nutrition reflects the recipe made with the optional maple syrup; omit it for a sugar-free version. If your banana is very ripe, you truly do not miss the syrup.
