- Whisk the banana smooth in a bowl. Add yogurt, oil, maple syrup, egg, and vanilla, and whisk until combined.
- Sprinkle flour, baking powder, baking soda, and salt over the wet mixture and fold just until no dry streaks remain.
- Preheat the oven to 350°F (175°C) and grease a 6-inch round cake pan with a parchment liner. Fold 1½ cups of the strawberries into the batter, fill the pan, and scatter the remaining ½ cup on top.
- Bake 20 to 25 minutes until a toothpick comes out clean. Cool 10 minutes, turn out onto a plate, and pile extra fresh strawberries on top.
Notes
