Ingredients

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1/3 cup sour cream
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3 large eggs, at room temperature
  • 1 cup whole milk, at room temperature
  • 2 tsp vanilla extract
  • 1 lb fresh strawberries, hulled and sliced
  • 2 tbsp granulated sugar
  • 2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Method

  1. Beat cream cheese and sugar until smooth. Add eggs, sour cream, and vanilla; pour into a parchment-lined 8-inch springform pan. Bake at 325°F for 40-45 minutes, cool in oven with door cracked, then chill at least 4 hours.
  2. Beat butter and sugar until fluffy. Add eggs and vanilla, then alternately mix in dry ingredients and milk. Divide between two greased 8-inch cake pans.
  3. Bake cake layers at 350°F for 25-30 minutes. Cool completely and trim tops flat if needed.
  4. Toss sliced strawberries with 2 tbsp sugar; let sit. Whip heavy cream with powdered sugar and vanilla to soft peaks.
  5. Place one cake layer on a plate, top with chilled cheesecake layer, half the berries, and a layer of whipped cream.
  6. Add second cake layer, spread remaining whipped cream on top, and pile the rest of the berries in the center. Slice and serve or chill 30 minutes first.

Notes

The cheesecake layer needs at least 4 hours to chill, so plan ahead. You can bake it the day before and refrigerate overnight. For the cleanest slices, chill the assembled cake for 30 minutes before cutting and wipe the knife between cuts.
