Ingredients
  

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 teaspoon fine sea salt
  • 2 cups all-purpose flour
  • 1/2 cup freeze-dried strawberries, ground into a powder
  • 1 teaspoon vanilla extract (optional)

Method
 

  1. Beat the butter, sugar, and vanilla (if using) with a mixer on medium speed until pale and fluffy, about 2 minutes.
  2. Mix in the flour, salt, and strawberry powder on low just until the dough comes together, about 30 seconds.
  3. Roll the dough into a 2-inch-wide log on parchment paper, wrap tightly, and chill at least 1 hour.
  4. Heat oven to 350°F (175°C). Slice the log into 1/4-inch rounds, place on a parchment-lined baking sheet, and bake 12 to 14 minutes until set. Cool on the pan for 5 minutes, then move to a wire rack.

Notes

The dough needs at least 1 hour of chilling time for clean slices. If you want a deeper strawberry color, don't overbake; the cookies will stay a soft pink rather than browning.
