Method
- Preheat oven to 350°F (175°C). Line an 8-inch square metal pan with parchment and butter the sides.
- Whisk flour, oats, both sugars, and salt. Stir in melted butter until clumpy. Reserve 1 cup for topping.
- Press the rest of the mixture into the pan in an even layer. Bake 12–15 minutes until edges are golden.
- Cook strawberries, rhubarb, 1/2 cup sugar, cornstarch, lemon juice, and vanilla in a saucepan for 8–10 minutes until thick and glossy.
- Spread filling over crust, top with reserved crumbs, and bake 25–30 minutes until golden and bubbling.
- Cool completely in the pan, then refrigerate at least 1 hour. Lift out and slice into squares.
Notes
The bars need a full chill in the refrigerator to cut cleanly. If you’re short on time, a 30-minute stint in the freezer after cooling works too.
