Strawberry Rhubarb Bars Recipe

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon fine sea salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, melted
  • 2 cups diced strawberries
  • 2 cups diced rhubarb
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8-inch square metal pan with parchment and butter the sides.
  2. Whisk flour, oats, both sugars, and salt. Stir in melted butter until clumpy. Reserve 1 cup for topping.
  3. Press the rest of the mixture into the pan in an even layer. Bake 12–15 minutes until edges are golden.
  4. Cook strawberries, rhubarb, 1/2 cup sugar, cornstarch, lemon juice, and vanilla in a saucepan for 8–10 minutes until thick and glossy.
  5. Spread filling over crust, top with reserved crumbs, and bake 25–30 minutes until golden and bubbling.
  6. Cool completely in the pan, then refrigerate at least 1 hour. Lift out and slice into squares.

Notes

The bars need a full chill in the refrigerator to cut cleanly. If you’re short on time, a 30-minute stint in the freezer after cooling works too.
