- Preheat oven to 350°F (175°C) and line a baking sheet. Cream the butter, brown sugar, and granulated sugar on medium speed 2 to 3 minutes until fluffy.
- Beat in the egg and vanilla until combined, scraping the bowl as needed.
- Whisk flour, baking soda, cinnamon, and salt together. Stir into the butter mixture just until no flour streaks remain.
- Fold in the oats, then gently fold in the strawberries and white chocolate chips.
- Drop rounded tablespoonfuls of dough onto the sheet, spacing 2 inches apart. Bake 10 to 12 minutes until edges are golden and tops are set. Cool on the sheet 5 minutes, then transfer to a wire rack.
Notes
Chill the dough 30 minutes for thicker cookies. The strawberries must be very dry; any excess moisture will make the cookies spread and turn soggy. Store with a slice of bread to retain softness.
