Method
- Combine graham cracker crumbs, sugar, and melted butter. Press firmly into a 9x13 inch pan. Refrigerate while preparing the filling.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in half of the whipped topping. Spread over the chilled crust.
- Dissolve gelatin in boiling water. Stir in frozen strawberries until the mixture begins to thicken. Refrigerate until the consistency of egg whites, about 1 hour. Spoon over the cream cheese layer, cover, and refrigerate at least 4 hours until fully set.
- Just before serving, spread the remaining whipped topping over the dessert. Slice and serve cold.
Notes
Chill time not included in prep: the dessert needs at least 4 hours to set, overnight is even better. If you want a brighter strawberry pop, scatter a few fresh sliced strawberries on top with the final whipped layer.
