- Preheat oven to 350°F and prepare an 8-inch round pan. In a large bowl, mash the banana, then whisk in the yogurt, egg, oil, and vanilla.
- Whisk flour, baking powder, and baking soda together in a separate bowl. Stir the dry mix into the wet ingredients until just combined.
- Gently fold in the chopped strawberries.
- Transfer batter to the pan, smooth the top, and bake 20 to 22 minutes until golden and a toothpick comes out clean. Cool in the pan for 10 minutes before turning out.
- Cool completely on a rack, then slice and serve.
Notes
If your strawberries are especially juicy, toss them in a teaspoon of the flour before folding them in so they don’t bleed too much color into the batter. For a celebratory touch, spread on a thin cream cheese frosting once the cake is fully cool.
