- Preheat oven to 325°F (163°C). Grease a 9x5-inch loaf pan. In a large bowl, beat the butter and cream cheese until smooth. Add the sugar and beat until light and fluffy, 3 to 4 minutes.
- Beat in the eggs one at a time, then mix in the vanilla.
- In a separate bowl, whisk together the 2 cups flour, baking powder, and salt. Gradually fold into the butter mixture. Toss the strawberries with the 1 tbsp flour, then gently fold into the batter.
- Scrape batter into the pan and smooth the top. Bake for 70 to 80 minutes, until a toothpick inserted in the center comes out with moist crumbs. Cool in the pan 10 minutes, then turn out onto a rack to cool completely. Slice and serve.
Notes
If the top browns too quickly, tent the loaf loosely with foil after 50 minutes. This cake tastes even better the next day, so it’s great for making ahead. A dusting of powdered sugar or a simple lemon glaze adds a pretty finish.
