Strawberry Cream Cheese Frosting Recipe

Ingredients
  

  • 8 oz fresh strawberries, hulled and chopped
  • 8 oz block cream cheese, cold
  • 1/2 cup unsalted butter, softened
  • 3 to 4 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt

Method
 

  1. Cook the strawberries in a small saucepan over medium heat until they break down, then simmer until reduced to a thick 1/3 cup paste. Cool completely.
  2. Beat the cream cheese and butter until smooth and fluffy, about 2 minutes.
  3. On low speed, add the powdered sugar, vanilla, and salt, then increase to medium-high and beat until thick. Add the strawberry puree and whip until the color is even and the frosting holds a soft peak, about 1 minute more.

Notes

The strawberry puree can be made up to 3 days ahead and kept in the fridge. If tiny red specks appear in the finished frosting, that’s just the fruit, nothing to worry about.
