Strawberry Chia Pudding Recipe

Ingredients
  

  • 2 cups (480 ml) milk of choice
  • 1 cup (150 g) fresh strawberries
  • 1/4 cup (40 g) chia seeds
  • 2 to 3 tbsp maple syrup or honey
  • 1 tsp vanilla extract (optional)

Method
 

  1. Blend the strawberries, milk, and vanilla until smooth, about 30 seconds.
  2. Pour into a bowl, whisk in the chia seeds and 2 tbsp sweetener. Let sit 5 to 10 minutes, then stir again to break up any clumps.
  3. Divide the mixture into 4 jars, cover, and refrigerate at least 4 hours or overnight until thick and creamy.
  4. Top each jar with fresh sliced strawberries and serve cold.

Notes

The pudding needs at least 4 hours in the fridge to set, but overnight is best. Give the mixture a second stir after the first 10 minutes for the smoothest texture. Adjust the sweetener to the ripeness of your berries, and taste the blended milk before adding the seeds.
