Strawberry Cheesecake Cookies Recipe

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup freeze-dried strawberries, coarsely crushed

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Beat butter and cream cheese until smooth, add sugar and beat until pale and fluffy, about 2 minutes. Beat in egg and vanilla.
  2. In a separate bowl, whisk flour, baking soda, and salt for 30 seconds.
  3. Fold dry ingredients into wet mixture until just combined. Fold in crushed strawberries gently. Cover and refrigerate dough 1 hour until firm.
  4. Scoop 1 1/2-tablespoon mounds onto sheets, spacing 2 inches apart. Bake 10 to 12 minutes, until edges are set and centers look slightly underdone. Cool on sheets 5 minutes, then transfer to a rack.

Notes

The dough needs a full hour of chill time; that is not included in the prep or cook times. For the brightest pink color, crush only what you’ll use right away; whole freeze-dried berries stay vivid longer in the pantry.
