Strawberry Cheesecake Bars Recipe

Ingredients
  

  • 1 1/2 cups graham cracker crumbs (about 10 full sheets)
  • 6 tbsp unsalted butter, melted
  • 24 oz (3 blocks) full-fat cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tbsp all-purpose flour
  • 1/3 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs, at room temperature
  • 1 pint fresh strawberries, hulled and finely chopped
  • 2 tbsp granulated sugar (for the swirl)
  • 1 tsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp cold water

Method
 

  1. Preheat the oven to 325°F (160°C) and line a 9x13-inch pan with parchment. Mix crust crumbs and melted butter, press into pan, bake 10 minutes.
  2. Beat cream cheese and 3/4 cup sugar until smooth, then beat in flour, sour cream, and vanilla. Add eggs one at a time on low, mixing just until combined.
  3. Cook strawberries, 2 tbsp sugar, lemon juice, and cornstarch slurry over medium heat until thick and glossy, about 5 minutes. Cool 10 minutes.
  4. Pour batter over crust, spread even, then dollop swirl sauce and pull a knife through to create ribbons.
  5. Bake 35 to 40 minutes until edges are set and center jiggles slightly. Turn off oven, crack door, and leave in 30 minutes. Cool completely at room temp.
  6. Cover and refrigerate at least 4 hours or overnight. Lift out, slice into squares, and serve cold.

Notes

The bars need 4 hours of chilling before slicing, so plan to make them the morning you want to serve them or the night before. The crust stays crisp even after a few days in the fridge.
