Ingredients
  

  • 8 oz fresh strawberries
  • 1¾ cups all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup buttermilk
  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tbsp strawberry puree (reserved from the cake)
  • Pinch of salt
  • 12 oz white chocolate, chopped
  • 1 tsp coconut oil or shortening
  • Freeze-dried strawberries, crushed
  • 24 lollipop sticks

Method
 

  1. Preheat oven to 350°F. Puree strawberries, reserve 2 tbsp for frosting, use ½ cup for cake. Whisk flour, baking powder, and salt. Cream butter and sugar, add eggs and vanilla, then mix in strawberry puree. Alternate adding flour mixture and buttermilk. Bake in greased 8-inch pan for 25-30 minutes. Cool completely.
  2. Beat cream cheese, butter, powdered sugar, reserved strawberry puree, and salt until thick and smooth. Crumble cake into fine crumbs, fold in frosting until mixture holds together.
  3. Roll into 1-inch balls (24 total), place on parchment-lined sheet, and chill 30 minutes.
  4. Melt white chocolate with coconut oil in the microwave in 30-second bursts, stirring until fluid and glossy.
  5. Dip stick tip in chocolate, insert into a ball, dip whole pop, tap off excess, sprinkle with crushed freeze-dried strawberries, and set in a foam block. Let coating set 15 minutes before serving.

Notes

The chilling time before dipping matters a lot here: 30 minutes in the fridge is the minimum, but if your kitchen runs warm, freeze the balls for 10 minutes right before dipping. Undipped cake balls freeze beautifully for up to a month, so you can prep the centers way ahead.
