Strawberry Buttercream Frosting Recipe

Ingredients
  

  • 1 cup chopped fresh strawberries (about 8 oz)
  • 1 cup unsalted butter, softened
  • 4 to 5 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of fine sea salt

Method
 

  1. Cook the strawberries in a small saucepan over medium heat, stirring often, until reduced to ¼ cup and thick like jam, about 8 to 10 minutes. Cool completely.
  2. Beat the butter and salt on medium speed until very pale and fluffy, about 3 minutes.
  3. Mix in the cooled strawberry puree and vanilla, then gradually add the powdered sugar, beating on low then medium until smooth and spreadable. Adjust consistency with a little milk or extra sugar if needed.
  4. Spread or pipe onto a cooled cake or cupcakes. Serve at room temperature.

Notes

Let the strawberry puree cool completely before adding it to the butter; warm puree will melt the buttercream. For the fluffiest texture, use butter that’s soft but still cool—it should dent easily when pressed but not look greasy.
