Strawberry Blueberry Crisp Recipe

Ingredients
  

  • 1 lb fresh strawberries, hulled and halved
  • 6 oz fresh blueberries (about 1 heaping cup)
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 2 tsp fresh lemon juice
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 6 tbsp cold unsalted butter, cut into small cubes

Method
 

  1. Heat oven to 375°F (190°C). Toss strawberries, blueberries, granulated sugar, cornstarch, and lemon juice in a bowl; let sit 5 minutes.
  2. Mix oats, flour, brown sugar, cinnamon, and salt in another bowl. Cut in cold butter until the mixture looks like damp sand with pea-sized lumps.
  3. Scrape the fruit into an 8-inch square baking dish and sprinkle the topping evenly over it. Bake 30 to 35 minutes until bubbly at the edges and deeply golden on top.
  4. Cool the crisp on a wire rack for 10 minutes, then scoop into bowls and serve warm with vanilla ice cream.

Notes

Frozen berries work directly from frozen; just add 5 minutes to the bake time. The crisp is at its crunchiest the day it’s made, but leftovers keep well in the fridge and rewarm beautifully in the oven.
