- Preheat oven to 350°F and grease a 9x5-inch loaf pan. Mash bananas in a large bowl, then whisk in butter, sugar, eggs, and vanilla until creamy.
- Add the 1 1/2 cups flour, baking powder, baking soda, and salt. Fold with a spatula just until no dry streaks remain, about 30 seconds.
- Toss strawberries with the 1 tbsp flour, then gently fold them into the batter with 4–5 strokes.
- Scrape batter into the pan, smooth the top, and bake for 50–60 minutes until a toothpick inserted in the center has moist crumbs.
- Cool in the pan 10 minutes, then turn out onto a rack and cool completely before slicing with a serrated knife.
Notes
If the loaf browns too quickly, tent it loosely with foil after 45 minutes. The cake slices cleanest when fully cooled and chilled briefly in the fridge.
