Strawberry Banana Bread Recipe

Ingredients
  

  • 3 very ripe bananas, mashed
  • 1 cup (150 g) chopped fresh strawberries
  • 2 cups (250 g) all-purpose flour
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (55 g) packed light brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (115 g) unsalted butter, melted and slightly cooled
  • 1 large egg, at room temperature
  • 1/2 cup (120 ml) buttermilk, at room temperature
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Mash the bananas, then whisk in the melted butter, both sugars, egg, buttermilk, and vanilla until smooth.
  2. In a separate bowl, whisk the flour, baking soda, and salt.
  3. Add the dry mixture to the wet and fold with a spatula just until no streaks of flour remain.
  4. Gently fold in the chopped strawberries.
  5. Scrape the batter into the pan and bake for 55 to 65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  6. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.

Notes

For the cleanest slices, let the loaf cool completely so the crumb sets. The bread will taste even better the next day.
