Stovetop Mac and Cheese Recipe

Ingredients
  

  • 8 oz elbow macaroni
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk, warmed slightly
  • 1/2 tsp salt, plus more for pasta water
  • 1/4 tsp garlic powder
  • 1/4 tsp mustard powder
  • Pinch of cayenne pepper
  • 2 cups shredded sharp cheddar cheese (about 8 oz)
  • 2 oz cream cheese, cut into small cubes
  • Freshly ground black pepper

Method
 

  1. Cook the 8 oz macaroni in salted boiling water until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
  2. In the same pot, melt the 3 tbsp butter over medium heat. Whisk in the 3 tbsp flour and cook for 2 minutes until nutty and smooth.
  3. Gradually whisk in the 2 cups milk. Cook, whisking, until thickened, about 3 to 5 minutes. Lower the heat, stir in the salt, garlic powder, mustard powder, and cayenne. Add the cheddar a handful at a time, stirring until melted. Stir in the cream cheese until smooth.
  4. Fold in the drained pasta. Warm for 30 seconds over low heat, then serve immediately with black pepper.

Notes

The pasta water is your secret for adjusting the sauce right before serving. If the mac and cheese sits for a few minutes and thickens, stir in a tiny splash of water or milk to loosen it back up.
