- Pound chicken breasts to an even ½ inch thickness. Combine yogurt, olive oil, lemon juice, garlic, smoked paprika, oregano, salt, and pepper. Coat chicken, cover, and refrigerate.
- Heat a grill pan or cast-iron skillet over medium-high heat until very hot. Sear chicken in batches, without moving, for 5 to 6 minutes until dark grill marks form.
- Flip and cook the second side 4 to 5 minutes, until an instant-read thermometer registers 165°F. Lower heat to medium and tent with foil briefly if browning too fast.
- Rest chicken on a cutting board 5 minutes, then slice against the grain and serve hot.
Notes
Marinate the chicken for at least 30 minutes before cooking; overnight delivers deeper flavor. Let the chicken rest at room temperature for 10 minutes before searing to take the chill off so it cooks more evenly. The char marks will be boldest when the pan is dry and the meat stays untouched.
