- Place brisket in a large pot, cover with 2 inches of cold water, add the spice packet, and bring to a boil. Reduce heat to low, cover, and simmer until fork-tender, 2 to 2 1/2 hours.
- Remove the brisket. Add onion, garlic, carrots, and potatoes to the broth, place the brisket back on top, cover, and simmer until potatoes are just tender, 15 to 20 minutes.
- Remove the brisket again. Tuck cabbage wedges cut side down into the broth, return the brisket, and simmer uncovered until cabbage is tender, 10 to 15 minutes.
- Rest the brisket 5 minutes, slice against the grain into 1/4-inch pieces, and plate with the vegetables. Spoon broth over everything and serve.
Notes
Rinse the brisket before cooking if you prefer a milder salt level. The cooking liquid makes a rich soup base once the meal is over; strain and freeze it for later use.
