Stovetop Corned Beef Recipe

Ingredients
  

  • 3 to 4 lb corned beef brisket, with spice packet
  • 1 medium onion, quartered
  • 4 cloves garlic, smashed
  • 4 carrots, peeled and cut into 2-inch chunks
  • 1 lb small potatoes, halved if large
  • 1 small green cabbage, cut into 6 wedges

Method
 

  1. Place brisket in a large pot, cover with 2 inches of cold water, add the spice packet, and bring to a boil. Reduce heat to low, cover, and simmer until fork-tender, 2 to 2 1/2 hours.
  2. Remove the brisket. Add onion, garlic, carrots, and potatoes to the broth, place the brisket back on top, cover, and simmer until potatoes are just tender, 15 to 20 minutes.
  3. Remove the brisket again. Tuck cabbage wedges cut side down into the broth, return the brisket, and simmer uncovered until cabbage is tender, 10 to 15 minutes.
  4. Rest the brisket 5 minutes, slice against the grain into 1/4-inch pieces, and plate with the vegetables. Spoon broth over everything and serve.

Notes

Rinse the brisket before cooking if you prefer a milder salt level. The cooking liquid makes a rich soup base once the meal is over; strain and freeze it for later use.
