- Pound chicken to even thickness, pat dry, and season both sides with salt, pepper, and garlic powder.
- Heat oil in a large skillet over medium-high heat. Sear chicken 4 to 5 minutes per side until deeply golden.
- Reduce heat to medium. Add butter, garlic, and rosemary. Baste chicken with the butter for 2 to 3 minutes, until an instant-read thermometer registers 165°F (74°C).
- Rest the chicken 5 minutes, then slice against the grain. Spoon pan butter over the top and serve with lemon juice if desired.
Notes
If your chicken breasts are thicker than 1 inch, allow a couple extra minutes of cook time. Letting the meat rest before slicing is critical for keeping the juices inside.
