Ingredients
  

  • 2 ¾ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • ½ cup full-fat cream cheese, softened
  • 1 cup whole milk, at room temperature
  • Gel food coloring in royal blue, black, and pink
  • 2 cups unsalted butter, softened (frosting)
  • 8 cups powdered sugar (frosting)
  • ¼ cup heavy cream (frosting)
  • 1 tbsp vanilla extract (frosting)
  • 8 oz white fondant, plus black and pink fondant or gel colors (decoration)

Method
 

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans, line with parchment. Whisk flour, baking powder, and salt. Beat 1 cup butter and sugar until fluffy, then add eggs, vanilla, and cream cheese. Alternate adding flour mixture and milk, mixing just until combined. Divide batter between pans.
  2. Bake 28–32 minutes until a toothpick comes out with moist crumbs. Cool in pans 15 minutes, then turn out onto a rack to cool completely.
  3. Beat 2 cups butter, then gradually add powdered sugar. Mix in cream and vanilla, beat until fluffy. Tint about 1 ½ cups blue with gel color, reserving white.
  4. Level cake layers. Fill and stack with blue frosting. Apply a thin crumb coat, chill 20 minutes, then frost the entire cake with blue buttercream.
  5. Cut fondant ears, eyes, nose, and mouth as described. Tint pieces pink, black, and blue as needed. Insert toothpicks into ear bottoms for attachment.
  6. Pipe blue buttercream stars over the cake surface for fur, leaving a white patch for the face. Secure fondant features onto the white area, blending edges with more stars. Serve at room temperature.

Notes

The cake layers can be baked a day ahead, wrapped tightly, and kept at room temperature. Assemble and decorate the day of the party for the freshest look. If the blue buttercream softens while piping, chill the bag for 10 minutes. Remove toothpicks before serving.
