Ingredients

  • 8 oz dried lo mein noodles or spaghetti
  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp brown sugar
  • 1 tsp rice vinegar
  • 1 tsp sesame oil, plus more for finishing
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp vegetable oil
  • 1 cup mixed sliced vegetables (bell pepper, carrot, bok choy)
  • 2 scallions, sliced
  • Red pepper flakes, to taste

Method

  1. Boil noodles until just chewy, drain, and rinse under cold water. While they cook, whisk the soy sauces, brown sugar, rice vinegar, and sesame oil together.
  2. Heat vegetable oil in a wok over high heat. Stir-fry garlic and ginger for 15 seconds, then add vegetables and cook 2 minutes until edges char.
  3. Add noodles and sauce to the wok, toss 1 minute until coated. Remove from heat, drizzle with sesame oil, and top with scallions and pepper flakes. Serve immediately.

Notes

Feel free to swap in any quick-cooking vegetables you have, snap peas, cabbage, or mushrooms all work. If adding meat or tofu, cook it first in the hot wok before the vegetables.
