- Whisk the fish sauce, brown sugar, soy sauce, garlic, chili flakes, and 1 tablespoon oil. Reserve 3 tablespoons of the marinade for later.
- Pat the chicken dry, coat with the remaining marinade, and let it sit for 20 minutes at room temperature or up to 2 hours in the fridge.
- Heat a grill to medium-high, oil the grate, and grill the chicken for 5 to 7 minutes per side until charred and cooked through (165°F). Brush the reserved glaze on during the last 2 minutes.
- Rest the chicken briefly, then top with cilantro and a generous squeeze of lime. Slice and serve.
Notes
If you want to use the reserved glaze as a final sauce, make sure to simmer it in a small pot for at least 1 minute before brushing it on or spooning it over the finished dish.
