- Season chicken with salt and pepper. Heat oil in a large skillet over medium-high. Sear thighs 5 to 6 minutes per side until 165°F; remove to a plate.
- Lower heat to medium. Add garlic and ginger to the skillet; stir 30 seconds. Pour in sweet chili sauce, soy sauce, and rice vinegar, scraping up browned bits.
- Stir the cornstarch slurry and pour it into the bubbling sauce. Stir 1 minute until thick and glossy.
- Return chicken to the skillet, spoon glaze over, and warm through 30 seconds. Coat both sides and serve topped with scallions and sesame seeds.
Notes
The sauce thickens further as it sits, so if you need to hold the dish for a few minutes, turn off the heat and add a tablespoon of water to loosen it when you are ready to serve.
