Sticky Pecan Pie Muffins Recipe

Ingredients
  

  • 1 cup pecan halves, roughly chopped
  • 1 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1 tsp vanilla extract
  • 1/4 tsp fine salt

Method
 

  1. Preheat oven to 350°F (180°C). Toast pecans on a baking sheet 6–8 minutes until fragrant; cool.
  2. Whisk eggs, brown sugar, melted butter, and vanilla for about 1 minute until smooth.
  3. Stir in flour and salt just until blended, then fold in toasted pecans.
  4. Fill a greased or lined 12-cup muffin tin three-quarters full and bake 18–22 minutes, until tops are golden and a toothpick comes out with a few moist crumbs.
  5. Cool in pan 5 minutes, then move to a wire rack. Serve warm.

Notes

For the stickiest centers, pull the muffins when the toothpick still shows a few moist crumbs, not clean. If you let them cool completely, a 10-second zap in the microwave brings back the gooey texture.
