Ingredients

  • 8 chicken drumsticks (about 2 lbs)
  • ½ cup ketchup
  • ¼ cup brown sugar (packed)
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper

Method

  1. Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil and set a wire rack on top. In a bowl, whisk together the ketchup, brown sugar, vinegar, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper.
  2. Pat the drumsticks completely dry with paper towels. Place them on the rack and brush a thick layer of the sauce over all sides. Reserve the remaining sauce.
  3. Bake for 20 minutes, then brush with the reserved sauce. Return to the oven and bake another 20 to 25 minutes, until the internal temperature reaches 165°F (74°C).
  4. Switch the broiler to high. Move the chicken so it sits about 6 inches from the top element and broil for 3 to 5 minutes, until the sauce bubbles and darkens with small charred spots. Serve hot.

Notes

Let the drumsticks rest for 5 minutes after broiling so the juices settle. The skin will stay tacky and glossy. If you want extra sauce for dipping, double the sauce ingredients and set half aside before coating the raw chicken; warm that reserved portion just before serving.
