- Whisk the soy sauce, brown sugar, sesame oil, garlic, ginger, 1 tsp gochujang, and 1 tsp rice vinegar together. Toss the sliced beef in the marinade and set aside.
- Heat a large skillet over high heat. Sear the beef in two single-layer batches, about 2 to 3 minutes per side, until charred and sticky.
- Toss the cabbage, carrot, and green onions with the remaining 1 tbsp gochujang, 1 tbsp rice vinegar, 1 tsp sesame oil, and ½ tsp sugar. Let it sit for 5 minutes.
- Warm the tortillas in a dry skillet, fill with beef and slaw, and finish with sesame seeds and cilantro. Serve right away.
Notes
The beef can sit in the marinade for up to 4 hours in the fridge for a deeper flavor, but even a quick 5-minute soak does the trick. If you like extra heat, add a thin drizzle of sriracha over the finished tacos.
