Sticky Hot Honey Grilled Chicken Recipe

Ingredients
  

  • 8 boneless skinless chicken thighs
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ⅓ cup honey
  • 2 tbsp hot sauce
  • 1 tbsp unsalted butter
  • 1 tsp apple cider vinegar

Method
 

  1. Whisk the olive oil, garlic, smoked paprika, salt, and pepper in a large bowl. Add the chicken and toss to coat. Let sit at room temperature while you heat the grill.
  2. In a small saucepan over low heat, stir the honey, hot sauce, butter, and vinegar until the butter melts and the mixture is smooth. Set the glaze near the grill.
  3. Preheat the grill to medium‑high (400°F/200°C) and oil the grates. Grill the chicken thighs, covered, for 5 to 6 minutes on the first side.
  4. Flip the chicken and cook 2 minutes. Brush the tops with glaze, close the lid, and cook 2 more minutes. Flip and brush the other side, then cook 1 to 2 minutes until the glaze sets and the chicken reaches 165°F (74°C).
  5. Transfer the chicken to a cutting board and rest 5 minutes. Slice against the grain and serve with extra glaze spooned over.

Notes

The vinegar in the glaze keeps the honey from becoming cloying, so don’t skip it even though the amount seems small. If you’re grilling a large batch, work in two rounds so the grates don’t drop in temperature and steam the chicken.
