Ingredients
Method
- Heat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper on a large rimmed baking sheet.
- Roast the sweet potatoes in a single layer for 20 minutes, until they start to soften and brown at the edges.
- Mix honey, soy sauce, garlic, ginger, and sesame oil. Coat the salmon with half the glaze, setting the rest aside.
- Push the roasted sweet potatoes toward the edges, place the salmon in the center of the pan, and bake for 8 to 12 minutes.
- Brush the reserved glaze over the salmon, broil for 1 to 2 minutes until sticky and dark, then serve immediately.
Notes
The broiler can go from caramelized to charred in a blink, so keep a close eye on it the entire time. If your broiler runs hot, crack the oven door open a few inches. No broiler? Just bake the glazed salmon a few minutes longer until the top looks tacky and set.
