Sticky Honey-Soy Salmon with Roasted Sweet Potatoes Recipe

Ingredients
  

  • 4 (6 oz) skinless salmon fillets
  • 2 lbs sweet potatoes, cut into 1-inch wedges
  • 2 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 large garlic clove, minced
  • 1 tsp grated fresh ginger
  • 1 tsp toasted sesame oil
  • 1 tsp sesame seeds (optional)

Method
 

  1. Heat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper on a large rimmed baking sheet.
  2. Roast the sweet potatoes in a single layer for 20 minutes, until they start to soften and brown at the edges.
  3. Mix honey, soy sauce, garlic, ginger, and sesame oil. Coat the salmon with half the glaze, setting the rest aside.
  4. Push the roasted sweet potatoes toward the edges, place the salmon in the center of the pan, and bake for 8 to 12 minutes.
  5. Brush the reserved glaze over the salmon, broil for 1 to 2 minutes until sticky and dark, then serve immediately.

Notes

The broiler can go from caramelized to charred in a blink, so keep a close eye on it the entire time. If your broiler runs hot, crack the oven door open a few inches. No broiler? Just bake the glazed salmon a few minutes longer until the top looks tacky and set.
