- Preheat oven to 400°F (200°C). Pat chicken dry, season with salt and pepper. Heat oil in an oven-safe skillet over medium-high. Sear chicken 4 minutes per side until golden, then set aside.
- Lower heat to medium. Cook garlic 30 seconds, then whisk in honey, both mustards, and a pinch of salt. Simmer 2 minutes until slightly thickened, then stir in butter until smooth.
- Return chicken to the pan, spoon glaze over, and bake 10-12 minutes until internal temp reaches 165°F (74°C).
- Rest 3 minutes, slice against the grain, spoon pan sauce over, and garnish with parsley if desired.
Notes
Let the chicken rest for 3 minutes after baking before slicing; this keeps the juices from running out. If your chicken breasts are very thick, they may need an extra couple of minutes in the oven.
