Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 1 tbsp whole-grain mustard
  • 2 cloves garlic, minced
  • 1 tbsp unsalted butter
  • Salt and black pepper
  • Chopped fresh parsley, for garnish (optional)

Method

  1. Preheat oven to 400°F (200°C). Pat chicken dry, season with salt and pepper. Heat oil in an oven-safe skillet over medium-high. Sear chicken 4 minutes per side until golden, then set aside.
  2. Lower heat to medium. Cook garlic 30 seconds, then whisk in honey, both mustards, and a pinch of salt. Simmer 2 minutes until slightly thickened, then stir in butter until smooth.
  3. Return chicken to the pan, spoon glaze over, and bake 10-12 minutes until internal temp reaches 165°F (74°C).
  4. Rest 3 minutes, slice against the grain, spoon pan sauce over, and garnish with parsley if desired.

Notes

Let the chicken rest for 3 minutes after baking before slicing; this keeps the juices from running out. If your chicken breasts are very thick, they may need an extra couple of minutes in the oven.
