- Mix ketchup, brown sugar, vinegar, Worcestershire, and paprika in a small bowl. Set half aside for serving.
- Pat chicken dry, season with salt and pepper, and let sit at room temperature for 20 minutes.
- Heat grill to a two-zone medium-high fire, oil the grates, sear chicken skin-side down 4 to 5 minutes, flip and sear another 3 to 4 minutes.
- Move chicken to cooler side, brush with basting sauce, cover and cook 20 to 25 minutes to 165°F, brushing again halfway.
- Rest 5 minutes, then pile onto a platter with reserved sauce on the side.
Notes
Let the chicken rest for a full five minutes before serving so the skin sets and the juices settle. If you are cooking over charcoal, add a small chunk of hickory or apple wood to the coals during the indirect phase for an extra layer of smoke.
