Sticky Chinese Chicken Thighs Recipe

Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp finely grated fresh ginger
  • 3 garlic cloves, minced
  • 1 tsp cornstarch mixed with 1 tbsp cold water
  • 1 tbsp neutral oil
  • Sliced green onions and sesame seeds, for serving

Method
 

  1. Pat chicken dry and season lightly with salt. Heat oil in a large skillet over medium-high. Sear thighs 5 minutes per side until deeply golden. Transfer to a plate.
  2. Lower heat to medium. Add ginger and garlic to the pan, stirring 30 seconds until fragrant. Pour in soy sauce, honey, rice vinegar, and sesame oil. Scrape up bits from the pan and simmer 1 minute.
  3. Stir cornstarch slurry and add to the pan along with any chicken juices. Return thighs to the skillet. Cook 3–4 minutes, flipping once or twice, until the glaze is thick and glossy.
  4. Slice chicken, plate over rice, and spoon the pan sauce on top. Garnish with green onions and sesame seeds.

Notes

If you want a darker, more caramelized look, swap the honey for packed brown sugar. Rest the sliced chicken for a minute before serving so the juices don’t run off the board.
