- Whisk the soy sauce, honey, sriracha, garlic, ginger, and oil in a bowl until the honey dissolves.
- Pat the wings dry, then toss with the marinade in a bowl or bag. Marinate at room temperature for 30 minutes, or refrigerate up to 24 hours.
- Heat the oven to 400°F (200°C). Place a wire rack on a foil-lined baking sheet. Lift the wings from the marinade, let excess drip off, and arrange skin-side up on the rack. Bake for 30 minutes.
- Switch to broil on high, keeping the wings on the middle rack. Broil for 2 to 3 minutes until the skin bubbles and turns deep golden brown with a few charred spots. Serve immediately.
Notes
If you want a saucier finish, boil the reserved marinade for a full 2 minutes to make it safe, then brush it over the baked wings right before broiling. The wings are best fresh from the oven, so have your sides ready.
