Ingredients

  • 4 skinless salmon fillets (6 oz each)
  • 2 tbsp Cajun seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil
  • 3 tbsp unsalted butter
  • 3 tbsp honey
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice

Method

  1. Mix the Cajun seasoning, salt, and pepper. Pat the salmon dry, rub with oil, and coat evenly with the seasoning mix.
  2. Heat a drizzle of oil in a large skillet over medium-high heat. Sear the salmon presentation-side down for 3 to 4 minutes until golden, then flip and cook 2 minutes.
  3. Reduce heat to medium-low. Add butter, honey, and garlic to the pan, stirring until melted. Add lemon juice and spoon the sauce over the salmon for 1 to 2 minutes until glazed.
  4. Transfer salmon to plates, spoon the remaining sauce on top, and serve immediately.

Notes

If you use skin-on salmon, sear the skin side down first and add an extra minute to that side. Homemade Cajun seasoning is easy: combine smoked paprika, garlic powder, onion powder, dried thyme, oregano, cayenne, and black pepper.
