- Pat chicken dry, season with salt and pepper, then sear in olive oil over medium-high heat for 5 to 6 minutes per side until golden. Remove to a plate.
- Lower heat to medium-low, melt butter, add garlic and cook 30 seconds, then whisk in brown sugar and soy sauce. Bubble gently for about 2 minutes until thickened.
- Return chicken to the pan, spoon glaze over, and simmer for 3 to 4 minutes until chicken reaches 165°F. Flip once and add a splash of water if glaze tightens.
- Rest chicken briefly, slice against the grain, drizzle remaining glaze over top, and serve hot.
Notes
Let the chicken rest a few minutes before slicing so the juices settle. If you prefer a thicker glaze, cook it 30 seconds longer in Step 2 before adding the chicken back.
