- In a small saucepan over medium heat, combine butter, brown sugar, water, cinnamon, nutmeg, and salt. Cook, stirring occasionally, until butter melts and sugar dissolves, about 3 minutes. Remove from heat and stir in vanilla.
- Preheat oven to 375°F. Arrange sweet potato slices in a 9×13-inch baking dish, overlapping slightly if needed. Pour the syrup evenly over the potatoes, nudging slices so syrup seeps between them.
- Bake uncovered for 45 to 50 minutes, basting with pan juices halfway through. The potatoes are done when knife-tender and the syrup is thick and bubbly.
- If using marshmallows, scatter them over the top and broil 1 to 2 minutes until puffed and golden. Otherwise, spoon pan syrup over the potatoes and serve hot.
Notes
You can assemble the dish a day ahead: slice the potatoes, make the syrup, and layer everything in the baking dish. Cover and refrigerate, then bake straight from the fridge adding about 10 minutes to the bake time.
