- Pat chicken dry, season with paprika, garlic powder, onion powder, salt, and pepper. Sear in hot oil over medium-high, 4 minutes per side until golden.
- Add BBQ sauce, scrape up browned bits, lower heat to medium-low, cover, and cook 6–8 minutes flipping once, until 165°F.
- Rest chicken 2 minutes, shred with forks, and return to skillet to coat in the sauce.
- While chicken cooks, whisk mayo, vinegar, sugar, salt, and pepper. Fold in cabbage.
- Warm tortillas in a dry skillet, then build tacos with chicken, slaw, and toppings. Serve immediately.
Notes
If you like a saucier taco, double the BBQ sauce and reserve half for drizzling over the assembled tacos. The slaw is best tossed right before serving so it stays crisp.
