Sticky BBQ Chicken Tacos with Tangy Slaw Recipe

Ingredients
  

  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper
  • 1/2 cup BBQ sauce
  • 2 cups shredded green cabbage
  • 1/4 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar (optional)
  • 8 small flour or corn tortillas
  • Pickled jalapeños, cilantro leaves, and lime wedges (for serving)

Method
 

  1. Pat chicken dry, season with paprika, garlic powder, onion powder, salt, and pepper. Sear in hot oil over medium-high, 4 minutes per side until golden.
  2. Add BBQ sauce, scrape up browned bits, lower heat to medium-low, cover, and cook 6–8 minutes flipping once, until 165°F.
  3. Rest chicken 2 minutes, shred with forks, and return to skillet to coat in the sauce.
  4. While chicken cooks, whisk mayo, vinegar, sugar, salt, and pepper. Fold in cabbage.
  5. Warm tortillas in a dry skillet, then build tacos with chicken, slaw, and toppings. Serve immediately.

Notes

If you like a saucier taco, double the BBQ sauce and reserve half for drizzling over the assembled tacos. The slaw is best tossed right before serving so it stays crisp.
