- Whisk soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and pepper together in a small bowl. Reserve 2 tablespoons of the mixture if you want a separate glaze, or set aside to boil later.
- Toss chicken thighs with the marinade in a bowl or bag until well coated. Let sit at room temperature 15 minutes while the grill heats.
- Grill over medium-high heat (400°F) for 5-6 minutes per side, until charred and a thermometer reads 165°F.
- Boil the reserved marinade in a small saucepan for 1-2 minutes until thickened. Brush over rested chicken, top with scallions and sesame seeds, and slice to serve.
Notes
For deeper flavor, marinate the chicken up to 2 hours in the fridge. Let the grilled chicken rest 5 minutes before slicing, so the juices settle. Any leftover glaze can be spooned over rice or vegetables.
