Method
- Reduce 2 cups apple cider in a saucepan over medium heat until syrupy, about 12 to 15 minutes. Cool completely and reserve 1/4 cup for dough, remainder for glaze.
- Warm milk and melted butter to lukewarm. Whisk flour, sugar, yeast, and salt. Add milk mixture, egg, and 1/4 cup cider syrup; stir to a shaggy dough. Knead 8 minutes until smooth. Rise covered 1 to 1.25 hours.
- Roll dough to 18×12 inches. Spread soft butter, then sprinkle brown sugar and cinnamon. Roll up tightly, seal seam, and cut into 12 slices.
- Arrange in a buttered 9×13 pan, cover, and rise 30 to 45 minutes. Preheat oven to 350°F (175°C). Bake 22 to 25 minutes until golden.
- Cool 5 minutes. Whisk powdered sugar with reserved cider syrup, adding milk if needed. Drizzle over warm rolls and serve.
Notes
The times listed are hands-on. Plan for about 1 hour 30 minutes of rising time total, spread across the two rises. For an overnight rise, refrigerate after Step 4 and bake the next morning, adding 10 to 15 minutes to the second rise.
