- Remove the membrane from the ribs and pat them dry. Coat both sides with the mustard. Mix the brown sugar, paprika, garlic powder, onion powder, salt, pepper, and cayenne, then rub the mixture all over the ribs.
- Preheat the air fryer to 380°F (193°C). Cut the rack in half if needed to fit in a single layer. Lay the ribs meat side down and air fry for 15 minutes. Flip and cook another 10 to 12 minutes, until the thickest part reaches 185°F to 190°F.
- Brush barbecue sauce over the top of the ribs and air fry for 3 to 4 minutes, until the sauce is bubbly and sticky.
- Rest the ribs on a cutting board for 5 minutes, then slice between the bones and serve immediately.
Notes
A little liquid smoke goes a long way; start with ½ teaspoon if you’re not sure. If you want extra saucy ribs, brush on more sauce right after they come out and let the residual heat set it. Ribs are best right away, but leftovers reheat beautifully in the air fryer.
