- Pat steak tips dry, season with salt and pepper. In a large skillet over medium-high heat, heat 1 tbsp oil. Sear half the tips until a dark crust forms, about 3 minutes per side. Remove to a plate. Repeat with remaining oil and tips.
- Lower heat to medium, melt butter. Cook onion until softened, about 4 minutes, then stir in garlic and cook 30 seconds.
- Sprinkle flour over onion, cook 1 minute. Slowly whisk in beef broth, then stir in Worcestershire and soy sauce. Simmer until thickened, about 5 minutes.
- Return steak tips and any juices to the skillet. Simmer 2 to 3 minutes more, then serve hot over mashed potatoes, noodles, or rice.
Notes
Take the steak tips out of the fridge about 20 minutes before you start so they sear evenly. The gravy will continue to thicken as it sits, so if you need to hold it for a few minutes before serving, loosen it with a splash of broth.
