Steak Sheet Pan Dinner Recipe

Ingredients
  

  • 1 1/2 lb sirloin steak, about 1 inch thick
  • 1 large head broccoli, cut into florets
  • 2 bell peppers, sliced
  • 1 red onion, sliced into wedges
  • 3 tbsp olive oil, divided
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper
  • Optional: 1 tsp smoked paprika

Method
 

  1. Pat the steak dry, rub it with 1 tbsp olive oil, salt, pepper, and optional paprika. Let it rest at room temperature while you preheat the oven to 425°F with a rack in the upper third.
  2. On a rimmed baking sheet, toss the broccoli, peppers, and onion with the remaining 2 tbsp olive oil, salt, and pepper. Roast for 10 minutes until starting to char.
  3. Remove the pan, push vegetables to the sides, and place the steak in the center. Melt the butter, stir in the garlic, and pour it over the steak and vegetables. Broil for 6 to 8 minutes for medium-rare (130°F).
  4. Let the steak rest for 5 minutes, slice against the grain, and serve with the vegetables and pan juices.

Notes

Letting the steak come to room temperature before it hits the oven gives you a better sear. Cook time varies with steak thickness; use the table above if you prefer more well-done. For easy cleanup, line the pan with foil, but skip it if you want the crispest vegetables.
