Ingredients

  • 8 oz boneless ribeye or sirloin steak
  • 2 packs instant ramen noodles, seasoning packets discarded
  • 3 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp vegetable oil
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Method

  1. Heat the vegetable oil in a large skillet over high heat. Pat the steak dry, season with salt, and sear for 3 minutes per side. Transfer to a cutting board.
  2. While the steak rests, cook the ramen according to package directions. Drain, reserving about ¼ cup of the starchy water.
  3. In the same skillet, sauté the garlic and ginger for 30 seconds. Add the soy sauce, brown sugar, rice vinegar, and sesame oil. Simmer for 1 minute until slightly thickened.
  4. Slice the steak thinly against the grain. Toss the noodles in the sauce, adding noodle water if needed. Serve in bowls topped with the steak, green onions, and sesame seeds.

Notes

For an even heartier bowl, add a soft-boiled egg. Let the steak rest a few minutes before slicing so the juices stay in the meat. The total time assumes you start heating the water while the steak cooks; bringing a pot to a boil may add a couple of minutes if you start from cold.
