Steak Fajitas Skillet Recipe

Ingredients
  

  • 1 lb flank or skirt steak, sliced thin against the grain
  • 2 tbsp vegetable oil, divided
  • 3 bell peppers (mixed colors), sliced into strips
  • 1 large onion, halved and thinly sliced
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp salt, plus more to taste
  • ¼ tsp black pepper
  • Juice of 1 lime
  • For serving: warm flour or corn tortillas, sour cream, guacamole, salsa, fresh cilantro

Method
 

  1. Toss steak with 1 tbsp oil, spices, salt, pepper, and lime juice. Let sit while prepping vegetables.
  2. Heat a large skillet over high heat and add the remaining oil. Sear peppers and onion with a pinch of salt until charred, about 5 to 6 minutes. Transfer to a plate.
  3. Add marinated steak to the hot skillet in a single layer. Cook undisturbed about 2 minutes, then toss and cook another 1 to 2 minutes until browned.
  4. Return the vegetables to the skillet, toss to combine, and serve right away with warm tortillas and toppings.

Notes
