Steak Fajita Marinade Recipe

Ingredients
  

  • 1 ½ lbs flank steak or skirt steak
  • ¼ cup soy sauce
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika (optional)
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Method
 

  1. In a medium bowl, whisk together the soy sauce, lime juice, olive oil, garlic, cumin, chili powder, smoked paprika (if using), salt, and pepper until the salt dissolves.
  2. Place the steak in a large zip-top bag or a shallow dish. Pour the marinade over the steak, seal or cover, and turn to coat evenly.
  3. Refrigerate for at least 30 minutes or up to 8 hours. When ready to cook, remove the steak, discard the marinade, and pat the steak very dry with paper towels.

Notes

If you’re using regular soy sauce instead of low-sodium, cut the added salt in half so the marinade doesn’t get too salty. You don’t need a grill for this, a cast-iron skillet over high heat gives you that same dark fajita crust.
